材料：土豆，瘦肉，大辣椒，葱，食盐，食用油，鸡精
做法：
1。土豆削皮，洗净，切片。放在凉水中浸泡，洗去表面淀粉，备用。
2。葱洗净，切成葱花。
3。瘦肉切条。
4。大辣椒洗净，去籽，掰成小块。
5。起锅，倒入较平时炒菜时多些的食用油，待油开了之后，放入土豆片，翻炒。由于有比较多，其实类似于油炸土豆片。炒到土豆片完全熟了之后取出土豆片备用，油依然留在锅里。土豆片一定要完全熟，多炒一会也没关系，那样比较好吃。
6。就着刚才的油，放入肉丝翻炒。待肉丝炒熟了之后放入葱花，大辣椒，翻炒。待到大辣椒熟了之后，放入食盐，鸡精，翻炒。这里要多放些盐，因为土豆片很难进味。
7。向锅里放入刚才炒好了土豆片，翻炒均匀之后，即可出锅食用。

这个菜是我读高中的时候学校旁边的一家小店里的拿手菜。那时候我真是百吃不厌。这道菜是以蔬菜为主要原料，可是味道却很浓重，比较油腻，很适合北方人的口味，特别是我这种肉食动物。配菜用的大辣椒也可以用别的菜来代替，上次我就是用做沙拉的卷心菜做配菜，也非常好吃。建议那些跟我一样喜欢重口味，肉食，油腻的朋友们，想要快乐的补充维生素的话，试试这道菜吧。保证你在满足口福之欲的同时，也同时补充身体所需的各种维生素。
